Ingredients


For the Bhaji

  • 2 cups boiled and mashed mixed vegetables (potatoes, cauliflower, peas, carrots)

  • 2 tablespoons oil

  • 1 cup finely chopped onions

  • 1 cup finely chopped tomatoes

  • 1/2 cup finely chopped bell peppers (capsicum)

  • 2 tablespoons Zest n Zing Pav Bhaji Masala

  • 1 teaspoon Red chili powder (adjust to taste)

  • Salt to taste

  • 2 tablespoons butter

  • 1 teaspoon ginger-garlic paste

  • 1/2 cup water

  • Fresh coriander leaves for garnish

For the Pav (Buns)

  • 8 pav (soft dinner rolls)

  • 2 tablespoons butter

Instructions


For the Bhaji

  1. Heat oil in a large pan or kadai over medium heat. Add the chopped onions and sauté until they turn translucent.

  2. Add the ginger-garlic paste and sauté for a minute until the raw aroma disappears.

  3. Add the chopped bell peppers and cook for a couple of minutes until they soften.

  4. Stir in the chopped tomatoes and cook until they become soft and pulpy.

  5. Add Zest n Zing Pav Bhaji Masala, Zest n Zing Red chili powder, and salt. Mix well and cook for 2-3 minutes until the oil starts to separate from the masala.

  6. Add the boiled and mashed mixed vegetables to the pan. Mash them and mix with the masala.

  7. Pour in the water and simmer for about 10-15 minutes, stirring occasionally, until the bhaji thickens and the flavors meld together.

  8. Add butter and stir it into the bhaji for a rich and creamy texture.

  9. Garnish the bhaji with fresh coriander leaves.

For the Pav

  1. Slit the pav (dinner rolls) horizontally without cutting them into two separate pieces.

  2. Heat a griddle or tava and add a little butter. Place the pav halves on the griddle and toast them until they turn golden brown and slightly crispy.
